This recipe has been circulating in our family for years.  Yep, years.  So long that my mom had to bring over her recipe written on an epic gingerbread card so I could share.  It is easy, fresh, flavorful and delicious!

The recipe for the dressing is:

  • 1/2 cup sugar
  • 1/3 cup fresh lemon juice
  • 2 tsp chopped red onion
  • 1/2 tsp salt
  • 1 tsp dijon mustard
  • 2/3 cup oil (we use olive, but you could use walnut, avocado, or sunflower oil)
  • 1 T poppy seeds

Mix all above ingredients and shake together in sealed container to combine together.

Toss this in 2-3 heads of washed romaine lettuce, 1 cup shredded swiss cheese, 1 cup cashews, 1 cup of dried cranberries and a cup of chopped apples or pears.  Honestly, I am guessing at amounts – just add what you like of these items.

Its a perfect salad in summer or paired with a lighter protein like fish or chicken.  It’s a crowd pleaser.
